Shirazi Salad

Shirazi Salad, is a refreshing and simple Persian cucumber and tomato salad (that's loaded with herbs and dressed in lime juice and extra virgin olive oil (lots of similarities to the Israeli Salad with a few more Middle Eastern spices added)! This quick no-lettuce salad is the perfect side to almost any entree.

  • 3 ½ cups tomatoes (diced)
  • 3 ½ cups cucumber (diced)
  • ½ cup red onion (chopped)
  • ½ cup green bell pepper (diced)
  • 2 Tbsp EACH chopped cilantro (or parsley), spring onions, dill
  • ½ cup fresh mint (or 1 Tbsp dried mint)
  • 3 Tbsp extra virgin olive oil
  • 2 Tbsp fresh lime juice (or lemon juice if preferred)
  • 2 ½ tsp cured Sumac
  • salt and pepper to taste (try our gourmet peppercorns for a bigger kick!)
  • 1 ½ tsp Za'atar spice mix (optional but I find it gives the salad an added depth of flavour)

Instructions

  1. In a large bowl, place the diced tomatoes, cucumbers, onions, and bell peppers.
  2. Add fresh and dried herbs, plus a generous pinch of salt and pepper. Add sumac. Finally, add lime juice, and a generous drizzle of extra virgin olive oil. Toss to combine.If using Za'atar, sprinkle just before serving.
  3. Cover and chill this salad in the fridge for 30 minutes (less if you want the salad more crunchy) to let the flavours come together.

Notes

TIPS


- Vegetables for this salad need to be diced very small or chopped. For texture and flavour allowing the veggies to quickly absorb the flavours. Cover and chill the salad for 30 minutes or so to allow the flavours to come together

- Prefer the salad on the crunchy side? Dress it with the lime juice and olive oil just before you are ready to serve.

- Grind and sprinkle some of our gourmet black peppercorns to add a bit of a kick.

- Cured Sumac is a wonderful deep red spice which comes from sumac berries, adding a depth and pleasant tang. Highly recommended for this dish.

- This is a GREAT side dish to grilled and roasted meats as well as a variety of curries and stews (anything really!). Pair with breads (pita, sourdough, etc.,) and along side your charcuterie board to impress your guests.
